Rice Crispy Squares

Cook's Country calls these "crispy rice cereal treats" but we all know what they really are. Alex helped make the peanut butter honey variation, which is not school-safe but is tasty.



Rice Crispy Squares

Ingredients

  • 8 tbsp unsalted butter
  • 566g (20 oz) marshmallows
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 10 C rice crispies or equivalent cereal

Directions

  1. Spray rubber spatula and 13x9" baking pan with cooking spray.
  2. Melt butter in dutch oven over medium heat.
  3. Add marshmallows, vanilla, and salt. Cook, stirring often with spatula, until marshmallows are only just melted, ~3 minutes.
  4. Remove from heat and stir in cereal until fully combined.
  5. Transfer cereal mixture to prepared pan. Dampen your hands and use them to press cereal mixture into an even layer.
  6. Let stand for 1 hour. Run spatula around edge of pan and invert onto cutting board to release.



Variations

Candy Bar

Ingredients

  • 8 tbsp unsalted butter
  • 566g (20 oz) marshmallows
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 10 C rice crispies or equivalent cereal
  • 2× 56g snickers bars, chopped
  • ½ C M&M Minis

Combine candy bars and M&Ms in a bowl. Add 1C mixture along with cereal; sprinkle remainder overtop before flattening.

Nutella Hazelnut

Ingredients

  • 8 tbsp unsalted butter
  • 566g (20 oz) marshmallows
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 10 C rice crispies or equivalent cereal
  • ½ C nutella
  • ¼ tsp espresso powder
  • ½ C hazelnuts, toasted, skinned, and coarsely chopped

Add nutella and espresso powder to dutch oven with cereal. Top with hazelnuts.

Bacon Caramel

Ingredients

  • 8 tbsp unsalted butter
  • 566g (20 oz) marshmallows
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 10 C rice crispies or equivalent cereal
  • 6 slices bacon, cooked crispy and crumbled
  • ¼ C caramel sauce
  • ¼ tsp coarse salt

Add bacon with cereal. Top with caramel sauce and coarse salt.

Peanut Butter Honey

Ingredients

  • 8 tbsp unsalted butter
  • 566g (20 oz) marshmallows
  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 10 C rice crispies or equivalent cereal
  • ½ C creamy peanut butter
  • 2 tbsp honey

Add peanut butter with marshmallows. Top with honey.
