Chili
I made a huge batch of chili a couple weeks ago. We ate most of it for dinner over the course of the week, but a cup or two was put into ice cube trays and frozen. The chili cubes are great because they fit nicely in the lunchbox and are easy to portion.If you don't have any leftovers that need using, tinned chili also works just fine here.
Starch
Fries
Just a couple handfuls of frozen fries cooked up in the toaster over and added to the lunchbox. Nothing fancy.Dairy
Grated Cheese
Just a handful of grated Cheddar. Feel free to use whatever cheese you prefer.Vegetable
Corn
I had a bunch of frozen corn on hand and it seemed thematically appropriate, so I just added that to the veggie section.Fruit
Cinnamon-Apple Shapes
Ingredients
- 1 apple
- 1 Tbsp. cinnamon sugar
Directions
- Peel the apple if you wish. (I just leave the skin on.) Slice it longitudinally into thick discs (~1cm).
- Cut into whatever shapes you prefer, avoiding the core and seeds.
- Place apple shapes into a sealed container or Ziploc bag and add cinnamon sugar.
- Shake vigorously to coat apple with sugar.
