Chocolate Chip Biscuits

These are very different from what I usually expect for chocolate chip cookies. The overall taste and texture was much more like shortbread with chocolate chips embedded in it than what I think of as a "classic" soft chocolate chip cookie.

Chocolate Chip Biscuits

From Edmonds Cookery Book p.35

Ingredients

  • 125g butter, softened
  • ¼ C sugar
  • 3 Tbsp sweetened condensed milk
  • a few drops of vanilla
  • 1½ C soft (standard/plain/cake) flour
  • 1 tsp baking powder
  • ½ C chocolate chips

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Cream together the butter, sugar, condensed milk, and vanilla until light and fluffy.
  3. Sift the flour and baking powder together and mix into the dough.
  4. Stir in the chocolate chips.
  5. Roll tablespoons of the dough into balls, place on a baking sheet lined with silicone or baking paper, and flatten
  6. Cook for ~20 minutes, until golden. Let cool for 1-2 minutes and then transfer to a wire rack to cool.
