Strawberry & Cream Paletas

A huge hit with the Kidlet, we've had to limit her to one per day or she'd just eat these for every meal. They're pretty easy to make, too! The recipe as written produced a bit more than we could fit in all the popsicle molds, but it turns out that if you drop a frozen banana into what's left in the blender, you get a pretty nice smoothie.

Strawberry & Cream Paletas

From the Complete Cookbook for Young Chefs by America's Test Kitchen

Ingredients

  • 1L hulled strawberries (or 500g frozen thawed strawberries)
  • 120mL heavy cream
  • 60mL honey
  • 5mL lemon juice
  • a pinch of salt

Directions

  1. Combine half of the strawberries and all of the other ingredients in a blender. Blend until smooth.
  2. Add the remaining strawberries and pulse briefly to chop them up but leave distinct chunks of strawberry in the mix.
  3. Pour into popsicle molds and freeze overnight.
