Breakfast for Lunch (Pancakes)

Baked Beans

Kidlet has been a big fan of baked beans lately (although he seems to have decided that they're "chili beans"), so I figured they'd make a reasonable protein offering. I know they're still pretty starchy, but I tried to bump up the protein a bit in the starch category to compensate for having a starchy protein.

Starch

Protein Pancakes

Normally I'd make pancakes from scratch. But when making a very small batch like this, I must admit, I do appreciate the convenience of a "just add water" mix. I actually had it left over from a camping trip this past summer, so it all worked out rather well.

Dairy

Cream Cheese & Jam Pocket Sandwiches

Ingredients

  • 2 slices of bread
  • 2 tsp. whipped cream cheese
  • 1 tsp. strawberry jam (or jam of choice)

Directions

  1. Mark out the borders of your sandwich.
  2. Spread 1 tsp. of cream cheese on each sandwich bottom and spread 1/2 tsp. of jam on top of that.
  3. Stamp designs on sandwich tops and place over bottoms.
  4. Crimp edges and cut out.

Grape Tomatoes


Fruit

Mango-Pomegranate Salad

Ingredients

  • 1/4 c. chopped mango
  • 1 Tbsp. pomegranate arils
  • 1/2 tsp. poppy seeds1

Directions

  1. Toss everything together and serve.

Dip

Vanilla Yogurt

I totally forgot to add the yogurt before I snapped the photo, so just ignore the empty dip well in the middle.



1 I used white poppy seeds because that's what I had on hand. No reason you couldn't use regular dark ones though! Back
