As suggested by the name, I decided to experiment with making a monochromatic lunch. White everything!

Grilled Chicken Breast
Obviously this would be lovely with home-cooked chicken. That said, we don't tend to eat a lot of meat at home these days, so there's a dearth of leftover chicken for lunchbox purposes. Given that, I opted for some pre-cooked chicken breast strips from the grocery store.Starch
Popcorn
Just a few popcorn kernels popped on the stove in a bit of coconut oil.Dairy
Cream Cheese & Strawberry Pocket Sandwiches
I don't normally buy white bread, but it would've kind of ruined the look of my "whiteout" lunch if I'd made the sandwiches with brown bread.Ingredients
- 2 slices white bread
- 2 tsp. whipped cream cheese
- 1 strawberry, sliced very thin
Directions
- If making pocket sandwiches: Mark out the borders of your sandwiches and spread bottoms with a tsp. of cream cheese each.
If making a traditional sandwich: Spread one slice of bread with cream cheese. (You'll probably want at least 1-2 Tbsp. for this type of sandwich.) - Place strawberry slices on top of cream cheese and top with remaining bread.
- If making pocket sandwiches: Seal edges and cut out. (You can save the crusts for making stuffing or bread pudding.)
