The Whiteout

As suggested by the name, I decided to experiment with making a monochromatic lunch. White everything!

Protein

Grilled Chicken Breast

Obviously this would be lovely with home-cooked chicken. That said, we don't tend to eat a lot of meat at home these days, so there's a dearth of leftover chicken for lunchbox purposes. Given that, I opted for some pre-cooked chicken breast strips from the grocery store.

Starch

Popcorn

Just a few popcorn kernels popped on the stove in a bit of coconut oil.

Dairy

Cream Cheese & Strawberry Pocket Sandwiches

I don't normally buy white bread, but it would've kind of ruined the look of my "whiteout" lunch if I'd made the sandwiches with brown bread.

Ingredients

  • 2 slices white bread
  • 2 tsp. whipped cream cheese
  • 1 strawberry, sliced very thin

Directions

  1. If making pocket sandwiches: Mark out the borders of your sandwiches and spread bottoms with a tsp. of cream cheese each.
    If making a traditional sandwich: Spread one slice of bread with cream cheese. (You'll probably want at least 1-2 Tbsp. for this type of sandwich.)
  2. Place strawberry slices on top of cream cheese and top with remaining bread.
  3. If making pocket sandwiches: Seal edges and cut out. (You can save the crusts for making stuffing or bread pudding.)

Cauliflower

Kidlet was not a fan of raw cauliflower. May try it steamed with some cheese sauce in the future and see if that goes over any better.

Mayo

I opted for mayo here because it's white(ish) and I'd hoped it might go well with the chicken and cauliflower. Another option would be using vanilla yogurt which should go nicely with the pocket sandwiches and banana slices.
