Tattie Broth
Slightly adapted from The Secret Garden Cookbook by Amy Cotler
Ingredients
- 2 Tbsp. butter or bacon grease or 2-3 slices uncooked bacon, chopped
- 1 onion, sliced
- 2 large potatoes, diced
- 3 c. chicken stock
- salt and pepper, to taste
- 1-2 carrots, grated
- 2-3 tsp. chopped flat-leaf parsley
Directions
- Melt the butter or cook the bacon over medium heat.
- Add the onion and cook, stirring occasionally, until it starts to brown (~10 minutes).
- Add the potatoes stock, and salt and pepper to taste.
- Increase heat to high and bring to a boil.
- Reduce heat slightly, cover, and cook until potatoes are tender (10-20 minutes).
- Add the carrot and parsley and cook for another 2-3 minutes.
