Jammy Chocolate Balls

Grammie got the Kidlet a new cookbook recently. It's all Secret Garden themed. We haven't had a chance to try out many of the recipes yet. But we did give these no-bake chocolate balls a go. They were pretty great! Although they didn't need nearly as much coating as the recipe called for. I think I'd halve the amount next time.



Jammy Chocolate Balls

Slightly adapted from The Secret Garden Cookbook

Ingredients

  • 100g vanilla wafer cookies
  • 100g pecans or walnuts
  • 25g granulated sugar
  • 60g icing (confectioners'/powdered) sugar
  • 2 Tbsp. cocoa powder
  • 1/4 c. red currant jelly (or cherry or seedless raspberry jam)

Directions

  1. Combine the cookies and nuts in a blender or food processor and pulse until finely ground.
  2. Remove 10-20g of the mixture, combine with the granulated sugar, and set aside in a bowl.
  3. To the remaining cookie mixture, add the icing sugar and cocoa powder and pulse to combine.
  4. Transfer this mixture to a separate bowl and add the jelly/jam.
  5. Mix thoroughly to form a "dough".
  6. Working with ~1 Tbsp. of dough at a time, shape it into round balls.
  7. Roll each ball in some of the reserved sugar-crumb mixture.
  8. Place crumbed balls on a plate and chill for at least an hour before serving.
