Flummery

The Kidlet and I made this ages ago. I would've sworn that I'd done a write-up for it, but I can't find it anywhere!

This is an incredibly simple dessert, but very tasty. I was skeptical of combining milk with Jell-O, but it actually worked really well and made for a delicious treat. I've since seen people doing something similar with sugar-free Jell-O and fat-free Greek yogurt to get a low-calorie diet-friendly dessert. I haven't tried to yogurt version yet, but after the success of the evaporated milk rendition, I'm definitely keen to give it a try!

Oh, and, now that I'm looking more closely at the recipe again, there's actually a "yoghurt flummery" variant listed after the main recipe. I'll add that below. They specify slightly different mixing instructions for the yogurt version, but I'd be curious to see what happens if you try to mix it up the same way as with the milk. Something to experiment with...

Ingredients

  • 2 (85g) packets of jelly (Jell-O) crystals
  • 1 1/2 c. boiling water
  • 375mL evaporated milk, chilled

Directions

  1. Put a large glass bowl in the fridge or freezer to chill while you do everything else.
  2. Dissolve the jelly crystals in the boiling water and leave it to cool for ~30 minutes.
  3. Pour ~1/2 c. of the jelly mixture into a serving dish (or pour ~2 Tbsp. each into four smaller dishes/jars).
  4. Pour the chilled evaporated milk into the chilled bowl and beat until foamy (~2 minutes).
  5. Add remaining jelly mixture and beat until very thick (~3 minutes).
  6. Spoon the milk mixture on top of the plain jelly and chill until set (~1 hour).



Variations

Yogurt Flummery

Ingredients

  • 2 (85g) packets of jelly (Jell-O) crystals
  • 1 1/2 c. boiling water
  • 300g yogurt, plain or flavoured

Directions

  1. Dissolve the jelly crystals in the boiling water.
  2. Chill until the jelly is about the consistency of raw egg white.
  3. Beat until thick and foamy.
  4. Stir in the yogurt.
  5. Spoon into a serving dish and chill until set.
