The Kidlet requested pancakes for breakfast and pointed out that her cookbook had a nice looking recipe. I prepared the inclusions and got out the ingredients, but she did the rest herself. Including flipping the pancakes! It was pretty great.
We ended up trying a whole bunch of different pancake flavours. Initially, we just did a plain one to get started. Then a few blueberry. Then some blueberry-banana and blueberry-cinnamon. Then we tried doing a few blueberry-banana-cinnamon triple-threat pancakes! And to finish off we made a couple chocolate-banana ones. I think strawberries or small pieces of cooked bacon would also make tasty inclusions.

Pancakes
From the Munchy Munchy Cookbook for Kids by Pierre A. Lamielle
Ingredients
- 2 c. milk
- 2 eggs
- 2 Tbsp. corn (or other neutral) oil
- 2 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/4 tsp. coarse sea salt, ground
- inclusions: blueberries, strawberries, banana slices, chocolate, etc. (optional)
Directions
- In a medium bowl, whisk together milk, eggs, and oil.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- Pour wet ingredients into dry ingredients while whisking to form a mostly smooth batter. (It's okay if it's a little lumpy.)
- Preheat a frying pan over medium-low to medium heat for 2-3 minutes.
- Add a little butter to the pan.
- Pour in ~1/4 c. of batter.
- If you want any inclusions, sprinkle them on top of the pancake just after you pour the batter into the pan.
- Cook until the edges of the pancake start to look dry, then slide a lifter under the pancake and quickly flip it over!
- Cook for 1 more minute, then remove it from the pan.
- Repeat with remaining batter.
- Serve topped with butter, maple syrup, icing sugar, whipped cream, fresh fruit, or any other toppings you'd like.
