This was quickly thrown together for lunch out of what we had in the fridge, and it was a huge hit with the Kidlet, who ate the entire (large) omelette and declared it a favourite.
The garlic beans used were leftovers from the fridge, but I've included instructions for them here.
Garlic Bean Omelette
Ingredients
- ½ tbsp butter
- A clove of garlic, minced
- A handful of green beans, coarsely chopped
- 2 large eggs, whisked
- a handful of chopped or grated cheddar
- some cream cheese
Directions
- Melt the butter in a small pan over medium heat.
- Add the beans and garlic and cook until the beans are tender and the garlic fragrant; remove to a plate.
- Add a bit more butter if needed.
- Reduce heat to medium low and add the eggs.
- Cook until the eggs set into a sheet that is strong enough to fold while remaining mostly intact.
- Put the beans, cheddar, and cream cheese on side of the egg sheet. Fold the other side over it.
- Cook until lightly browned, then flip over and cook a bit more until browned and fully set.
- Eat!
