Applesauce Snack Cake

This cake came out quite well. Very moist and tender with good apple flavour. As with many recipes these days though, I kept thinking how nice it would've been with whole wheat flour. I think whole wheat flour, or even a mix of whole wheat and oat flour, would've worked really well here and I'll definitely be trying it that way next time. I'm also tempted to try cutting back the sugar just a little bit. The Kidlet has already requested to make this one again, so I suspect that I won't have to wait long to try out these modifications.

Applesauce Snack Cake

Adapted from the Complete Cookbook for Young Chefs by America's Test Kitchen

Ingredients

  • 150g (hard or soft) whole wheat flour
  • 75g oat flour
  • 1 tsp. baking soda
  • 1/4 tsp. coarse sea salt, ground
  • 1/2 c. sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 c. unsweetened applesauce
  • 1/2 c. unsalted butter, melted
  • 1/4 c. apple cider or apple juice
  • 1 large egg
  • 1 tsp. vanilla extract

Directions

  1. Grease and flour a 20cm (8") square baking pan and preheat oven to 160°C (325°F).
  2. Whisk together flours, baking soda, and salt.
  3. In a separate bowl, combine sugar, cinnamon, and nutmeg.
  4. Remove 2 Tbsp. of spiced sugar from the bowl and set aside.
  5. Add applesauce, butter, cider/juice, egg, and vanilla to the remaining spiced sugar.
  6. Mix dry ingredients into wet.
  7. Pour batter into prepared pan.
  8. Sprinkle with reserved spiced sugar.
  9. Bake at 160°C (325°F) for 35-40 minutes.
  10. Cool for at least 30 minutes before serving.
