Quick Tomato Salsa

This recipe is heavily adapted. We replaced the jalapeños with a chipotle for milder heat and smoky flavour, added corn and onion, and -- as the Kidlet is a huge fan of garlic -- doubled the garlic. We also hand-minced the ingredients rather than using a food processor.

The results are delicious! We had it with tortilla snack chips and enjoyed every bite. Skipping the food processor means that the tomato chunks are a bit large; we had no problem with that but I do think it might benefit from some casual mincing of the tomato chunks in the future.


Quick Tomato Salsa

Adapted from the Complete Cookbook for Young Chefs by America's Test Kitchen

Ingredients

  • 1 (14.5 oz) tin of diced tomatoes
  • ¼ C fresh cilantro leaves
  • 1 chipotle in adobo
  • 2 tsp lime juice
  • 2 garlic cloves
  • ⅛ tsp salt
  • 1 tbsp dried minced onion
  • ¼ C frozen corn

Directions

  1. Open tin and dragin tomatoes.
  2. Mince cilantro, chipotle, garlic, and optionally tomato pieces.
  3. Stir together all ingredients and serve with tortilla chips.
