Lemon Burst Crinkle Cookies

This was a new recipe and I'm not as confident in my improvisation skills as symbol is, so we made it almost by the book. As usual, the Kidlet loved juicing the lemons, cracking the eggs, and mixing everything together, but really didn't want to touch the raw dough in case it stuck to her hands. She was willing to help roll the dough balls in icing sugar at the end, but only after I shaped them -- and after they'd been in the fridge overnight, which makes them a lot less sticky.

The one deliberate deviation we made from the original recipe was using a duck egg -- a gift from our neighbors, who keep ducks -- instead of the one whole egg and one yolk the original calls for; the duck eggs are larger and proportionally more of them is yolk, so I figured that would be roughly equivalent.

I say "deliberate" because there were two other changes we needed to make, in the end -- adding about ¼ C more flour to get it to actually form into a firm dough ball, and then baking the cookies for about twice as long as expected. The original says to cook "until the edges just begin to brown", but this took ~25 minutes for us rather than the 12-14 expected! The results were still delicious, although on day 2 symbol found them a bit hard, and suspected they might retain their softness longer with a slightly shorter bake.

Lemon Burst Crinkle Cookies

Ingredients

  • 1 C sugar
  • ¼ C canola or corn oil
  • 1 duck egg (or one chicken egg + 1 yolk)
  • the zest of 1 lemon
  • 2 tbsp lemon juice
  • 1½ C all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ C icing sugar

Directions

  1. Stir together sugar, oil, eggs, lemon zest, and lemon juice.
  2. Add flour, baking powder, and salt. Mix together until a dough ball forms, adding more flour if necessary.
  3. Cover and fridge for at least 1 hour or as long as overnight.
  4. Divide into 12 pieces. Roll into balls, and roll each ball in icing sugar.
  5. Bake at 350°F until the edges are just starting to brown, 20-24 minutes (but probably start checking at 12 just in case).
