Hummus

The Kidlet was hungry the other day and wasn't really feeling any of the leftovers we had available, so we turned to her cookbook to look for something she could help make. She settled on hummus. We don't have a food processor, but we managed to do the job with the "food chop" setting on the blender.

Hummus

Slightly adapted from the Complete Cookbook for Young Chefs by America's Test Kitchen

Ingredients

  • 1/4 c. water
  • 2 Tbsp. lemon juice
  • 2 Tbsp. tahini
  • 2 Tbsp. olive oil
  • 2 c. cooked chickpeas
  • 2 cloves garlic
  • 1/4 tsp. coarse sea salt
  • 1/4 tsp. cumin seeds, ground

Directions

  1. Stir together water, lemon juice, tahini, and olive oil.
  2. Combine chicpeas with garlic, salt, and cumin in food processor (or blender).
  3. Process for 10 seconds then stop and scrape down sides of bowl/jar.
  4. With processor/blender running, slowly pour water mixture through feed tube/lid and process until smooth. If using a blender, you may need to add up to an extra 1/4 c. of water.
  5. This makes a very thick hummus. If you like it thinner, add more water, a Tbsp. at a time, until desired consistency is reached.
